Dehydrated Maitake sold by me on this site are 'current year' mushrooms. That is why the availability is only from September to November.
Although dried Maitake will last several years when stored in cool, dry dark area I choose not to store quantities. I pick the mushrooms, as found each year, dehydrate enough based on prior years sales records and/or incoming orders and stop there.
Also, my dried Maitake consist of only the best part of the leaflets. There is no waste. Read my most recent write-up on dehydrating Sheep's Head mushrooms.
The minimum order is 2 ounces.
